What each ingredient does

Green tomatoes
Provide the bulk of the relish and a tart, fresh vegetable base.
Cabbage
Adds crunch and bulk that holds its texture through the long simmer.
Cucumbers
Contribute crisp texture and mild freshness to the chopped vegetable mix.
Brown sugar
Balances the sharp vinegar with sweetness and adds a molasses depth.
Vinegar
Acidifies the mixture, preserving the vegetables and giving the relish its tang.
Coarse sea salt
Draws water out of the vegetables overnight, firming their texture before cooking.

The step that matters

Draining off the brine in the morning. Salt draws out a lot of liquid. If the brine is not fully drained, the relish stays watery and dilutes the vinegar, so the flavor and keeping quality suffer.
