Olive Sauce

Ingredients

Directions

Prepare

  1. Soak the olives in hot water for 30 minutes to extract the salt.

  2. Carefully peel the olives close to the stones, keeping the pulp in one piece.

Make the sauce

  1. In a saucepan, heat the oil and add the onion. Cook until the onion begins to color.

  2. Stir in the flour until smooth, then add the stock and let it simmer.

  3. Add the olives to the sauce, season with salt and pepper, and simmer for 20 minutes.

  4. Skim the sauce carefully and serve.

What each ingredient does

Queen olives
Provide the main flavor and the pulp that gives the sauce its body.
Flour
Thickens the oil and stock into a smooth, lightly bodied sauce.
Rich stock
Forms the liquid base of the sauce and carries its savory flavor.
Salad oil
Carries the onion's flavor and helps the flour cook into a smooth roux.

The step that matters

Stirring the flour in smoothly. Flour added to hot fat and liquid can clump if not stirred in well. Whisking it smooth before adding the stock helps it dissolve evenly and thicken the sauce without lumps.

Swap the onion
