Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Barley
Its starch thickens the stock and gives the soup a body.
Chicken stock
Forms the liquid base and carries the flavour of the soup.
Egg yolks
Thicken the soup when gently cooked, adding richness and a silky texture.
Cream or milk
Adds richness, creaminess and a mild sweetness to the soup.

The step that matters

Cooking the egg yolk mixture. Egg yolks thicken when heated but can curdle if they get too hot or cook too long. Adding them to the hot soup and cooking for only a minute keeps the texture smooth.
