Ingredients

Directions

Prepare the cauliflower

  1. Clean the cauliflower and cut it into sprigs.

  2. Boil the sprigs in salted water for 2 minutes, then drain.

Layer and cook

  1. Pack the sprigs tightly in a saucepan with the heads downward, on a layer of thin bacon slices.

  2. In the vacant spaces, layer the veal, beef suet, bread crumbs, pepper, salt, parsley, chives, and chopped mushrooms.

  3. Pour the beaten eggs over the layers and let them soak.

  4. Add enough stock to cover the mixture.

  5. Simmer gently until the cauliflower is tender and the sauce is reduced.

Serve

  1. Invert the saucepan onto a hot dish to serve.

What each ingredient does

Eggs
Bind the stuffing and set into a custard-like sauce as they cook.
Bread crumbs
Absorb the egg and stock, giving the stuffing body and a soft texture.
Beef suet
Adds fat that enriches the stuffing and keeps it moist as it cooks.
Veal
Provides savory meat flavor and body to the stuffing.
Cauliflower
Forms the tender base of the dish, cooking until soft in the stock.

The step that matters

Simmer gently until the cauliflower is tender and the sauce is reduced. A gentle simmer lets the eggs set without curdling or toughening, while the cauliflower cooks through. A hard boil can make the egg mixture grainy and break up the sprigs.
