Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the mixture so it holds its shape when frozen and served.
Sugar
Adds sweetness and keeps the frozen texture soft rather than hard.
Egg whites
Add air and a lighter, fluffier texture to the frozen mixture.
Grape juice
Provides the main fruit flavour and the violet colour.
Lemon juice
Adds acidity that brightens the sweetness and balances the flavour.
Powdered sugar
Sweetens the mixture and dissolves smoothly into the partly frozen base.

The step that matters

Stir in the egg whites once frozen. Egg whites trap air and lighten the texture. If the mixture is fully solid, they cannot blend in evenly, and if it is still liquid, they will not hold their volume.

Swap the grape

How well each one fits the dish's main ingredients (sugar, lemon, egg):

  1. Orangefits better
  2. Vanillafits better
  3. Limefits better
  4. Grapethe original

Fit is the average pairing score against sugar, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
