What each ingredient does

Eggs
Egg yolks and whites set into a firm, sliceable custard structure when baked.
Milk
Adds moisture and softness to the baked custard, keeping it tender.
Flour
Browned in butter and thickened with mushroom water to form the sauce.
Butter
Fat that is browned with the flour, adding nutty flavor to the sauce.
Mushrooms
Provide earthy flavor and a tender, meaty texture to the sauce.

The step that matters

Browning the flour in butter. Cooking the flour in fat until it turns golden removes raw starch taste and builds flavor, while stirring constantly prevents scorching and lumps before the liquid is added.
