To Boil Meat
Ingredients
Directions
Put the meat into boiling water.
Boil steadily but not violently, skimming often.
When done, the meat will cleave from the bone.
For best results, keep the water temperature between 158°F and 165°F.
Recipe from a historical cookbook (Internet Archive).
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
