Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal shoulder
Slow simmering turns this tough cut tender and moist, giving the dish its main body.
Bacon
Renders fat into the crock, adding richness and savory flavor to the braising base.
Onion
Releases sweetness and aroma as it cooks in the bacon fat.
Hot water
Loosens the pan juices so they form a gravy if they are too thin or absent.

The step that matters

Browning the veal. Searing the surface over medium heat builds browned, savory flavor through the Maillard reaction. Turning it keeps the color even without scorching the meat or the fat.

Swap the onion

How well each one fits the dish's main ingredients (veal, pepper):

  1. Capsicumfits better
  2. Carrotfits better
