Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Beef Scrapple

Ingredients

Directions

Cook the brisket

  1. Boil the brisket in enough water to cover it until the bones fall out easily.

  2. Drain the brisket and chop it finely.

  3. Return the chopped brisket to the pot with the cooking water and bring to a boil.

Thicken and set

  1. Thicken the mixture with equal parts cornmeal and buckwheat flour, or use all cornmeal.

  2. Season with sage, salt, and pepper.

  3. Once cooked, pour the mixture into pans to cool.

  4. After cooling, cut into slices and fry without adding fat.

What each ingredient does

Brisket
Provides the meat and rendered juices that give the scrapple its savory flavor and body.
Corn meal
Thickens the cooking liquid into a mush that sets firm when cooled.
Buckwheat flour
Adds a nutty, earthy flavor and helps thicken the mixture so it holds its shape.

The step that matters

Thickening the mixture. Cornmeal and buckwheat flour must be stirred in while the liquid is hot so they hydrate evenly without lumps. The starch gelatinizes as it cooks, and that gel is what lets the cooled loaf hold together for slicing and frying.

Swap the sage

How well each one fits the dish's main ingredients (corn, buckwheat, flour, pepper):

  1. Turmericfits better
  2. Cinnamonfits about as well
  3. Marjoramfits about as well
  4. Sagethe original

Fit is the average pairing score against corn, buckwheat, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
