Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Stir enough baking soda into sour buttermilk to sweeten it.

  2. Pour the mixture through a strainer.

  3. Stir in enough flour and salt to make a very stiff batter, almost a dough.

  4. Shape into small loaves and bake immediately in a hot oven at 400°F (200°C).

  5. Cover for the first 15 minutes to prevent crust formation until it has risen.
