What each ingredient does

Fresh lean beef
Provides the meat flavour and the dissolved protein and savoury compounds that make up the broth.

The step that matters

Simmering gently for 2 hours. Keeping the liquid at a gentle simmer extracts flavour without making the broth cloudy or greasy. Replacing lost water keeps the beef submerged so the broth stays concentrated rather than drying out.
