Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
The main protein, which becomes tender when boiled and then browned in fat.
Flour
Thickens the tomato mixture so the sauce becomes smooth and clings to the sweetbreads.
Tomatoes
Provide the acidity and body of the sauce, balancing the richness of the sweetbreads.
Butter
Adds fat and rich flavour to the finished sauce.

The step that matters

Frying the sweetbread pieces. Frying quickly in enough fat browns the surface through the Maillard reaction, adding flavour and colour. Frying too long or too hot can toughen and dry the sweetbreads.

Swap the tomato

How well each one fits the dish's main ingredients (butter, pepper, flour, parsley):

  1. Shallotfits better
  2. Carrotfits better
  3. Chivefits better
  4. Tomatothe original

Fit is the average pairing score against butter, pepper, flour, parsley. Candidates are from the same food group and used in at least 100 recipes.
