Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the oysters

  1. Remove oysters from their liquor and check for shell bits.

  2. Heat the oyster liquor until hot, then strain it.

Assemble the dish

  1. Cover the bottom of a baking dish with hard crumbs, butter, and a sprinkle of salt and pepper.

  2. Layer oysters over the crumbs, adding butter, more crumbs, salt, and pepper in between layers.

  3. Finish with a top layer of crumbs and butter.

  4. Season with salt and pepper, then pour the hot oyster liquor mixed with cream over the layers.

Bake

  1. Bake in a 400°F (200°C) oven until browned, being careful not to overcook the oysters.

What each ingredient does

Oysters
Provide the main filling and their briny flavour, cooked gently to stay tender.
Hard bread crumbs
Form the layers that soak up the liquid and hold the dish together.
Butter
Adds richness and helps the top brown in the oven.
Rich cream
Adds moisture and richness, setting softly into the layers as it bakes.
Oyster liquor
Supplies extra briny flavour and moisture for the crumbs.

The step that matters

Avoid overcooking the oysters. Oysters are delicate and toughen and shrink when overheated, so they should be baked only until the top browns and the edges just curl.
