Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the shrimp

  1. Boil the shrimps in well-salted water for 20 minutes.

  2. Drain, peel, and chop the shrimps very fine.

Mix and bake

  1. In a bowl, combine the chopped shrimps, eggs, butter, black pepper, and ground celery. Stir the mixture together and pour it into a greased pan.

  2. Cover the top with bread crumbs.

  3. Bake at 350°F (175°C) for 15 minutes.

What each ingredient does

Shrimps
Provide the main protein and flavour of the dish.
Eggs
Bind the chopped shrimp together and set during baking to hold the shape.
Butter
Adds richness and moisture to the mixture.
Bread crumbs
Form a crust on top that browns during baking.

The step that matters

Chopping the shrimp very fine. Fine pieces distribute evenly through the egg binder and set into a uniform, cohesive texture instead of a loose, lumpy one.

Swap the celery

How well each one fits the dish's main ingredients (shrimp, egg, butter, pepper, bread):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Capersfits better
  4. Celerythe original

Fit is the average pairing score against shrimp, egg, butter, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
