Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the eggs

  1. Preheat the oven to 400°F (200°C).

  2. Drop one egg at a time onto a buttered plate, being careful not to break the yolk, until the plate is full.

  3. Sprinkle a little salt and pepper on each egg and add a bit of butter.

  4. Bake until the whites are set.

Make the variation

  1. For a variation, cover the plate with a mixture of moistened bread crumbs and chopped meat.

  2. Make hollows in the mixture and drop an egg into each hollow.

  3. Season and bake as before.

What each ingredient does

Eggs
Set into a firm structure as the whites cook, forming the main body of the dish.
Butter
Adds richness and fat, carrying flavour and helping the eggs brown lightly at the edges.
Moistened bread crumbs
Hold moisture and give the variation a soft, absorbent base that cushions the eggs.

The step that matters

Bake until the whites are set. Egg whites set at about 60 to 70°C while yolks stay runnier, so pulling the plate too early leaves raw whites and overbaking makes the yolks chalky and rubbery.
