Ingredients

Directions

  1. Separate the shoulder from the ribs or breast without leaving the bones bare.

  2. Squeeze half a lemon or Seville orange over the ribs.

  3. Rub a slice of butter on the ribs and sprinkle with pepper and coarse sea salt.

  4. Replace the shoulder for a few moments, then place it on another dish.

  5. Divide the neck from the breast at the broken bones.

  6. Separate the gristly part from the breast along its length.

  7. Serve with a little gristle with each bone of the breast or neck.

  8. If serving part of the breast cold, sprinkle it with chopped parsley while hot.
