What each ingredient does

Citric acid
Provides the sour acidity and reacts with the carbonate to release carbon dioxide bubbles.
Sub-carbonate of soda
Reacts with the citric acid to release carbon dioxide, producing the effervescence.

The step that matters

Combine the two mixtures and drink while effervescing.. The fizzing comes from the acid and carbonate reacting when mixed. The reaction is fast, so the two solutions should be combined and drunk immediately, before the carbon dioxide escapes and the drink goes flat.
