Ginger Beer

Ingredients

Directions

Make the wort

  1. Add the water, sliced ginger, loaf sugar, and lemon juice to a large pot.

  2. Boil the mixture for about 1 hour.

  3. Skim off any scum that forms during boiling.

  4. Strain the mixture through a fine sieve into a fermentation vessel.

Ferment and clarify

  1. Add a little yeast to the fermentation vessel.

  2. Stir the mixture several times over the next two days.

  3. Transfer the fermented liquid to a cask.

  4. Remove the yeast from the bung hole with a spoon.

  5. Fine the ginger beer with a little isinglass steeped in beer.

  6. Remove sediment as it rises.

Bottle and ripen

  1. Bottle the ginger beer.

  2. Cork the bottles.

  3. Allow the bottled ginger beer to ripen for another two weeks.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White ginger
Provides the spicy aroma and characteristic flavour of the drink.
Loaf sugar
Sweetens the drink and provides the sugar that yeast ferments into alcohol and carbonation.
Yeast
Ferments the sugars, producing carbonation and alcohol.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.
Isinglass
Fines the liquid, helping suspended yeast and sediment settle out for a clearer drink.

The step that matters

Corking the bottles after fermentation. Sugar left in the liquid keeps fermenting in sealed bottles, building pressure as carbon dioxide accumulates. Fully settled, clarified liquid and secure corks help prevent bottles from bursting or losing their fizz.

Swap the lemon

How well each one fits the dish's main ingredients (ginger, sugar, beer):
