Why it works: Radish and horseradish share more aroma than cooks usually use. They rank in the top 1% of all ingredient pairs, and cooks put them together in 38 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Pickle Radish Pods

Ingredients

Directions

  1. Soak radish pods in salt and water overnight.

  2. Boil the salt and water, then pour it over the pods.

  3. Cover the jars to retain steam; repeat pouring boiling water until pods are green.

  4. Drain the pods on a sieve.

  5. Make a pickle with white wine vinegar, mace, ginger, long pepper, and horseradish.

  6. Pour the boiling hot pickle over the pods.

  7. When the pickle is almost cold, heat it again and pour it over the pods.

  8. Seal the jars with a bladder.
