What each ingredient does

Sugar
Adds sweetness and body, balancing the sharpness of the citrus and spirit.
Egg whites
When boiled with the sugar syrup and skimmed, they clarify the punch by collecting impurities.
Milk
Softens the harsh edge of the spirit and citrus, giving the punch a smoother, rounder texture.
Rum or brandy
Provides the alcoholic base that extracts citrus oils and preserves the punch.
Lemons
Supply acidity and aromatic citrus oils from the steeped pulp.

The step that matters

Scumming the boiled sugar syrup. Egg whites must be boiled with the sugar and carefully skimmed; the coagulated whites carry impurities to the surface, and skipping this leaves a cloudy, less clear punch.
