To Roast a Turkey

Ingredients

Directions

Prepare the turkey

  1. Cut off the turkey's feet, leaving the head on.

  2. Stuff the turkey with force-meat and truss it up like a fowl for roasting.

  3. Turn the head under the wing and skewer it.

Roast and serve

  1. Roast the turkey for 1 hour and 15 minutes.

  2. If the turkey is small, roast for 1 hour.

  3. If the breast burns too quickly, cover it with buttered paper.

  4. Serve with good brown gravy and garnish with lemon.

What each ingredient does

Turkey
Forms the main body of the dish, cooking through as the meat's proteins set.
Force-meat (stuffing)
Adds moisture and flavour inside the bird as it cooks.
Butter
Adds fat that helps the skin brown and protects the breast from drying.
Good brown gravy
Adds moisture and savoury depth to the carved turkey.

The step that matters

Covering the breast if it burns. The breast cooks faster than the legs and can dry out or scorch before the rest of the bird is done. A buttered paper cover shields it from direct heat while the thighs finish cooking.
