Directions for Mangoes

Ingredients

Directions

  1. Cut the ends off the cucumbers and remove the seeds with a narrow spoon.

  2. Prepare the cucumbers for pickling by greening them.

  3. Chop shallots and garlic with some fresh ginger, a few cloves, and long pepper.

  4. Mix the chopped ingredients and fill the cucumbers completely.

  5. Seal the ends neatly.

  6. For the pickling solution, add 1 ounce of black mustard seeds to every quart of pickling vinegar.

  7. After two weeks, strain the vinegar from the pickles, boil it, and pour it over the pickles while hot.

  8. If the vinegar is insufficient, add more to cover the pickles.
