Boiled Turkey

Ingredients

Directions

  1. Pick the turkey clean and draw it at the rump.

  2. Cut off the legs and tuck the ends of the thighs into the body, then tie them fast.

  3. Flour the turkey and place it in cold water.

  4. Boil gently, skimming off the scum, and cover the kettle.

  5. Boil for about 30 more minutes.

  6. Make stuffing with grated bread, lemon peel, suet, chopped oysters, eggs, and cream.

  7. Fill the turkey's cavity with stuffing and form the rest into balls.

  8. Boil the stuffing balls and arrange them around the dish.
