Directions

Prepare the veal

  1. Cut the cold veal into very fine pieces without chopping.

Make the sauce

  1. In a saucepan, combine a few spoonfuls of gravy, broth, milk, or water with lemon peel, nutmeg, salt, and pepper; bring to a boil.

  2. Shake a little flour among the veal and add it to the saucepan; heat until hot but do not boil.

  3. Just before serving, stir in a bit of butter rolled in flour.

Serve

  1. Place thin slices of bread in a dish and garnish with lemon.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold veal
Provides the meat that is gently heated and held in the sauce.
Flour
Thickens the liquid so the sauce becomes smooth and lightly bodied.
Butter
Adds richness and a silky texture to the finished sauce.
Bread
Serves as a plain base under the minced veal.

The step that matters

Heat without boiling. Once the flour-thickened liquid boils hard, it can become lumpy and tough, and the fine veal can toughen. Keeping it just hot preserves a smooth, tender texture.
