Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 350°F (175°C).

  2. Mix suet, chopped parsley, sweet herbs, grated bread, lemon peel, pepper, salt, nutmeg, and egg in a bowl.

  3. Stuff the mixture securely into the veal.

  4. Cover the fat of the loin and fillet with paper.

  5. Roast the breast with the caul on until nearly done, then remove the caul.

  6. Baste and dredge the meat with flour.

  7. Serve with melted butter poured over it.
