What each ingredient does

Sweetbreads
Main protein; cooked to a tender, delicate texture as the centrepiece of the dish.
Egg yolk
Binds the coating and helps the crumbs and herbs stick to the sweetbreads.
Bread crumbs
Form a crisp, golden coating that adds texture and some browning.
Force-meat
Adds a rich, seasoned stuffing that gives body and moisture alongside the sweetbreads.
Brown gravy
Provides a savoury, moist sauce that coats the dish and carries the flavours.
Lemon pickle
Adds sharp, tangy acidity that brightens the rich gravy and meats.
