Cook the beef

  1. Place the brisket of beef in a kettle and cover it with water.

  2. Bring the water to a boil and then simmer for 2 hours.

Add vegetables and finish

  1. One hour before finishing, add turnips, carrots, and celery.

  2. Remove enough broth to fill your soup dish and boil it for an hour with the vegetables, salt, and pepper.

What each ingredient does

Brisket of beef
Provides the main meat and, as it simmers, releases flavor and gelatin into the broth.
Turnips
Add mild sweetness and firm bite as they cook in the broth.
Carrots
Add natural sweetness and color, holding their shape through the long boil.
Celery
Adds aromatic, savory flavor to the broth as it cooks down.

The step that matters

Simmer the beef gently. A rolling boil toughens meat proteins and can make the broth cloudy, while a gentle simmer lets connective tissue slowly break down into gelatin for tender meat and a richer broth.

Swap the turnip

How well each one fits the dish's main ingredients (beef, carrot, celery, pepper, bread, mutton):

  1. Tomatofits better
  2. Capsicumfits about as well
  3. Turnipthe original
  4. Leekfits about as well

Fit is the average pairing score against beef, carrot, celery, pepper, bread, mutton. Candidates are from the same food group and used in at least 100 recipes.
