A Mince Pie

Ingredients

Directions

  1. Boil the neat's tongue for 2 hours, then skin and chop it as small as possible.

  2. In a large bowl, mix the chopped tongue, suet, apples, currants, raisins, and powdered sugar.

  3. Add the mace, nutmeg, cloves, cinnamon, and brandy to the mixture and combine well.

  4. As you fill the pie, add small pieces of candied citron and orange.

  5. Store any leftover filling in a pot, covered, without adding citron or orange until ready to use.
