Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Penny loaf crumb
Forms the body of the pudding, soaking up milk to become soft and tender.
Eggs
Bind the mixture and set on cooking, giving the pudding its firm structure.
Milk
Softens the bread and adds moisture to the mixture.
Butter
Adds richness and fat, contributing to a smoother texture.

The step that matters

Tie the mixture in a cloth and boil for 1 hour. The cloth must be tied firmly and the water kept at a steady boil so the pudding holds its shape and cooks through evenly without becoming waterlogged.

Swap the currant

The recipe marks currant as optional. How well each one fits the dish's main ingredients (milk, butter, sugar, nutmeg, egg, white wine, sauce):

  1. Vanillafits better
  2. Lemonfits better
