Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Good cream
Forms the thick, rich body of the clotted cream as it sets.
Rennet
Causes the cream to curdle and set into a solid mass.
Fruit juice
Adds flavor and a pink color to the cream poured over the top.

The step that matters

Breaking the curd gently. Rough breaking tears the forming curd and releases liquid unevenly, so the set cream drains poorly and turns grainy. A gentle touch keeps the curd intact for a smoother, more even texture.

Swap the strawberry

How well each one fits the dish's main ingredients (cream, sugar):

  1. Vanillafits better
  2. Strawberrythe original
  3. Raspberryfits about as well
  4. Raisinfits less well

Fit is the average pairing score against cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
