Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the shells

  1. Grease the scallop shells.

  2. Place a scallop in each shell.

  3. Dust with pepper and coarse sea salt.

  4. Pour ½ teaspoon of vinegar over each scallop.

Top and bake

  1. Cover with a layer of bread crumbs dusted with pepper and coarse sea salt.

  2. Moisten the crumbs with the scallop liquor and a little vinegar.

  3. Strew bits of butter over the top.

  4. Bake at 400°F (200°C) for 20 minutes.

  5. Brown the crumbs if necessary, adding more butter if needed.

What each ingredient does

Scallops
Provide the main protein, which cooks gently under the crumb topping.
Bread crumbs
Form a crisp, browned topping that protects the scallops from drying out.
Butter
Adds fat that helps the crumbs brown and gives richness.
Vinegar
Adds a touch of acidity that brightens the sweetness of the scallops.

The step that matters

Browning the crumbs. Scallops cook quickly and can turn rubbery if overbaked, so the crumbs should be browned just until golden while the scallop stays tender. Moistening the crumbs first helps them brown evenly without drying out.
