Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Haricot beans
Provide the main body of the dish, becoming tender and creamy when soaked and simmered.
Dripping
Adds fat for frying, carrying flavour and helping the beans brown in the pan.
Onions
Add sweetness and savoury depth as they soften and brown in the fat.

The step that matters

Frying the beans until golden brown. Surface browning depends on dry heat and enough hot fat, so the beans need space and a hot pan. Crowding or too little fat steams them instead of browning them.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (beans, onion, pepper):

  1. Cuminfits better
  2. Garlicfits better
  3. Turmericfits about as well
  4. Parsleythe original

Fit is the average pairing score against beans, onion, pepper. Candidates are from the same food group and used in at least 100 recipes.
