Red Cabbage Pickled

Ingredients

Directions

Prepare the cabbage

  1. Remove the rough outer leaves from the cabbage and cut it in half, removing the hard stalk.

  2. Slice the cabbage thinly and place it on a large dish, sprinkling it well with coarse sea salt.

  3. Tilt the dish to allow the water to drain away and leave it to drain for 24 hours, shaking and turning the cabbage occasionally.

Make the pickling liquid

  1. Boil the vinegar and spices for 15 minutes, then let them cool.

  2. Optional: Add capsicum pods and mustard seed to the spices if desired.

Pack and pickle

  1. Once the cabbage is drained, pack it into jars, pressing it down, and cover with the cooled vinegar and spices.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Red cabbage
Forms the crisp, fibrous body of the pickle that holds the vinegar flavour.
Vinegar
Acidity preserves the cabbage and sharpens its flavour, and it turns the cabbage bright purple-red.
Coarse sea salt
Draws water out of the cabbage, softening it slightly and concentrating its flavour before pickling.

The step that matters

Draining the salted cabbage for 24 hours. Salt draws water out of the cabbage through osmosis. If the cabbage is not drained well, excess water dilutes the vinegar and weakens the pickle, and the cabbage stays watery rather than crisp.

Swap the cabbage

How well each one fits the dish's main ingredients (vinegar, allspice, ginger):

  1. Mustardfits better
  2. Shallotfits better
  3. Cucumberfits better
  4. Cabbagethe original

Fit is the average pairing score against vinegar, allspice, ginger. Candidates are from the same food group and used in at least 100 recipes.
