What each ingredient does

Apples
Cooked to a soft pulp, they form the body and bulk of the pudding.
Whipped cream
Adds air and fat, giving the frozen pudding a light, creamy texture.
Sugar
Sweetens the mixture and lowers its freezing point so it stays soft and scoopable.
Apricot jam
Adds fruit sweetness and flavour, and pectin that helps the mixture set smoothly.
Raisins
Add chewy texture and concentrated sweetness that contrasts with the smooth base.
Curaçao
Adds orange aroma and alcohol, which keeps the frozen mixture softer.

The step that matters

Freezing the mixture with ice and saltpetre. Saltpetre lowers the temperature of the ice bath below freezing, so the pudding can set. Keeping the mould packed in cold ice until serving maintains firmness.

Swap the apple

How well each one fits the dish's main ingredients (apricot, sugar, orange, raisin, syrup, almond, cream):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits better
  4. Applethe original

Fit is the average pairing score against apricot, sugar, orange, raisin, syrup, almond, cream. Candidates are from the same food group and used in at least 100 recipes.
