Why it works: Nutmeg and allspice match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 3,331 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Raised Pie
Ingredients
Directions
Make hot-water paste according to recipe No. 1686.
Using your hands, raise the pie crust or cut out pieces for the top and bottom, and a long piece for the sides.
Attach the bottom and side pieces with beaten egg, pinching the edges together.
Line the pie with forcemeat, then add a layer of veal seasoned with salt, pepper, nutmeg, and allspice.
Layer sliced bacon or cooked ham, then repeat layers of forcemeat, veal, and bacon until the meat rises about an inch above the paste.
Finish with a layer of forcemeat to fill all cavities and pack the meat tightly.
Brush the top edge with beaten egg, place the cover on, and pinch the edges with a paste pincher.
Make a hole in the center of the lid and decorate with leaves stuck on with egg white.
Brush the entire pie with beaten yolk.
