Why it works: Cheese and butter are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 7,962 recipes. Both carry delta-dodecalactone, which smells sweet, creamy. The science ↓

To Make a Fondue

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the mixture

  1. Separate the yolks from the whites of the eggs.

  2. Beat the yolks in a bowl and grate or thinly slice the cheese.

  3. Add the butter, pepper, and salt to the yolks and mix thoroughly.

  4. Whisk the egg whites until stiff and gently fold them into the mixture.

Bake and serve

  1. Pour the mixture into a souffle dish or small round cake tin, filling it only halfway.

  2. Pin a napkin around the dish and bake at 400°F (200°C) for 15 to 20 minutes.

  3. Serve immediately while hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trapped in whisked foam give the fondue its light, risen structure, while yolks enrich it.
Parmesan or cheshire cheese
Melts into the base, adding savoury flavour and body to the custard-like mixture.
Butter
Adds fat for a smooth, rich texture and mouthfeel.

The step that matters

Folding in the egg whites. Whites hold air only when whisked until stiff, and overmixing or stirring vigorously when folding deflates the foam. Gentle folding keeps the mixture light so it rises in the oven.
