Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Scald the codlins, then cool and peel them.

  2. Mash the pulp finely with a spoon.

  3. Mix in the egg yolks and whites, beating until smooth.

  4. Add nutmeg and sugar to taste.

  5. Melt the butter and beat it until creamy.

Assemble and bake

  1. Make a puff pastry and line a tin pan with it.

  2. Pour the apple mixture into the pastry, leaving the top open.

  3. Bake in a 400°F (200°C) oven for 15 minutes.

Serve

  1. Invert onto a dish and sprinkle with powdered sugar.
