Excellent Bread for Breakfast

Ingredients

Directions

Make the dough

  1. Combine flour, lard, mashed potato, salt, yeast, and sugar in a bowl.

  2. Add cold water (in summer) or warm milk (in winter) to make a soft dough.

  3. Knead the dough for 30 minutes.

  4. Let the dough rise in a cool place (summer) or a warm place (winter).

Shape and bake

  1. Two hours before breakfast, shape the dough lightly without kneading, greasing your hands with lard.

  2. Grease the top of the shaped dough and let it rise again.

  3. Bake for 30 minutes, or 45 minutes if in the form of a loaf or rolls.

  4. For muffins, add two beaten eggs to the dough.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the gluten network that gives the dough its structure and chew.
Yeast
Produces gas as it ferments, making the dough rise and become light.
Mashed potato
Adds moisture and starch, helping the bread stay soft and moist.
Lard
Adds fat that tenderizes the crumb and keeps the dough from sticking.
Sugar
Feeds the yeast and helps the crust brown during baking.
Eggs (in the method)
Add structure and richness to the muffin version of the dough.

The step that matters

Letting the dough rise at the right temperature. Yeast activity depends on temperature: a cool place slows fermentation in summer and a warm place speeds it in winter. Judging the rise by the stated conditions keeps the dough from under- or over-proving, which affects the final lightness.

Swap the walnut

How well each one fits the dish's main ingredients (flour, potato, sugar, milk):

  1. Almondfits better
  2. Chestnutfits better
  3. Milletfits better
  4. Walnutthe original

Fit is the average pairing score against flour, potato, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
