Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
Thickens the sauce as it cooks and gives it a smooth, rich body.
Flour
Stabilizes the milk and egg mixture, helping the sauce thicken without curdling.
Butter
Adds fat for richness and a silky mouthfeel to the finished sauce.
Milk
Adds moisture and mild richness, forming the base of the creamy sauce.

The step that matters

Stirring the egg mixture into the hot liquid. Egg proteins set with heat and can scramble or curdle if the liquid is too hot or added too fast. Stir steadily and keep the heat moderate so the sauce stays smooth and thickens evenly.

Swap the thyme

How well each one fits the dish's main ingredients (chicken, milk, pepper, egg, flour, butter, parsley):

  1. Nutmegfits about as well
