What each ingredient does

Oysters
Are the main item, cooked briefly so the coating crisps while the inside stays tender.
Eggs
Bind the bread crumbs to the oysters so the coating adheres during frying.
Bread crumbs
Form a crisp, golden outer crust when fried in hot fat.
Butter and lard
Act as the frying fat, conducting heat and adding richness and browning.

The step that matters

Fry the oysters until golden brown, without burning the fat. If the fat is too hot, the bread crumb coating browns or burns before the oyster heats through. Fat that is too cool lets the coating absorb oil and turn greasy. Keeping the fat steadily hot gives a crisp, evenly golden crust.
