The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fish

  1. Wash the shad well and wipe it dry.

  2. Rub the inside and outside with coarse sea salt and cayenne pepper.

Stuff and bake

  1. Prepare stuffing by mixing bread, black pepper, coarse sea salt, thyme or parsley, celery seed, chopped onion, and butter.

  2. Stuff the fish and tie it up.

  3. Place the fish in a baking pan with 1 pint of water and 2 tablespoons of butter.

What each ingredient does

Shad
Is the main body of the dish, cooked whole and held moist by stuffing and basting.
Bread
Forms the bulk of the stuffing, soaking up juices and keeping the inside tender.
Butter
Adds fat and richness, carrying flavour and helping the fish brown and stay moist.
Flour
Dusted over the fish, it helps form a light browned crust on the surface.

The step that matters

Basting well during the bake. Shad is a lean, delicate fish that dries out quickly in the oven. Regular basting with the buttery pan liquid keeps the flesh moist and promotes even browning over the long bake.

Swap the onion

How well each one fits the dish's main ingredients (pepper, bread, thyme, celery, butter, walnut, egg):

  1. Capsicumfits better

Fit is the average pairing score against pepper, bread, thyme, celery, butter, walnut, egg. Candidates are from the same food group and used in at least 100 recipes.
