Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Plunge the goose into a pot of boiling water and let it cook for 30 minutes.

  2. Prepare the stuffing by mixing mashed potatoes, butter, onions, sage, parsley, thyme, and black pepper.

  3. Stuff the goose with the mixture.

Season and bake

  1. Place the goose in a pan with a slice of fat pork and add broth or meat liquor.

  2. Mix pepper vinegar, celery vinegar, mustard, and acid fruit jelly; pour over the goose.

  3. Butter the breast of the goose and season with salt and pepper.

  4. Bake in a hot oven at 400°F (200°C), dredging with flour and basting frequently until done.

  5. Serve with its own gravy.

What each ingredient does

Goose
Is the main protein; its fat renders during roasting and it provides the bulk of the dish.
Mashed potatoes
Fill the cavity as a starchy stuffing that absorbs juices and stays moist.
Butter
Adds richness and helps the breast skin brown during roasting.
Flour
Dredged over the bird, it helps form a browned, crisp outer layer.
Broth or meat liquor
Provides liquid in the pan that keeps the bird moist and forms the base for gravy.
Acid fruit jelly
Adds sweetness and acidity that balance the sharp vinegars and mustard.

The step that matters

Bake in a hot oven at 400°F (200°C), dredging with flour and basting frequently until done.. Goose has a lot of fat and can dry out or stay tough if cooked unevenly. Frequent basting keeps the surface moist and helps the skin brown, while the pan liquid keeps the meat from scorching.
