What each ingredient does

Vinegar
Provides the acidic liquid that preserves and sharpens the pickles.
Brown sugar
Adds sweetness and rounds out the sharp vinegar.
Cucumbers
Form the main body of the pickles and soften as they cook.
Onions
Add savory flavour and soften into the pickling liquid.

The step that matters

Boiling until the cucumbers are tender. Cucumbers must be cooked through so they take up the spiced vinegar and become tender. Underboiling leaves them firm and less flavoured, while overboiling can turn them mushy.
