Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Smothered Chicken

Ingredients

Directions

Prepare

  1. Prepare the chicken a day before cooking by splitting it open along the back.

  2. When ready to cook, wipe the chicken dry with a clean towel.

  3. Rub the chicken with butter and sprinkle with pepper and salt.

Cook

  1. Place the chicken in a pan with the slice of bacon or pork and add water.

  2. Simmer for an hour or more, basting frequently.

  3. Once cooked, transfer the chicken to a hot dish.

Make the gravy and serve

  1. In the remaining gravy, stir in a beaten egg and mix carefully.

  2. Pour the gravy around the chicken, avoiding pouring it directly on top.

  3. Brown the crushed crackers in a pan, then sift them over the chicken.

  4. Garnish with parsley and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein; slow simmering in liquid keeps the meat moist and tender.
Butter
Adds fat and richness to the skin and meat, supporting browning and flavour.
Egg
Beaten into the gravy, it thickens and gives the sauce a smooth, body-rich texture.
Crushed crackers
Browned and sifted over the dish, they add a toasted, crisp topping and texture.
Bacon or pork
Its fat and savoury flavour season the cooking liquid and the gravy.

The step that matters

Stirring the beaten egg into the gravy. Egg proteins set when heated, so if the gravy is too hot or stirred poorly the egg can curdle or scramble instead of thickening smoothly. Mix carefully and keep the heat gentle.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, butter, pepper, pork, egg):

  1. Thymefits about as well
  2. Parsleythe original
  3. Garlicfits about as well
  4. Marjoramfits about as well
