What each ingredient does

Chicken
Provides the meat and rich cooking liquid that becomes the base of the sauce.
Egg
Thickens the warm liquid as it sets, giving the sauce body.
Flour
Stabilises the egg mixture and helps thicken the sauce smoothly.
Butter
Adds richness and a smooth, glossy finish to the sauce.
Milk
Adds creaminess and softness to the cooking liquid and sauce.

The step that matters

Stirring the egg mixture into the hot liquid. Egg proteins set with heat, so adding the beaten egg to very hot liquid too fast can curdle it. Stir steadily and keep the liquid below a hard boil so the sauce thickens smoothly.
