Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Gradually add the sifted flour and mix well.

  4. Stir in the essence of bitter almond.

Bake

  1. Beat the egg whites to stiff peaks and gently fold them into the batter.

  2. Pour the batter into a greased cake pan and bake for about 30-40 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff peaks, they trap air that lifts and lightens the cake's crumb.
Butter
Creamed with sugar to trap air and add richness and a tender texture.
Sugar
Creamed with butter to help build a light, fluffy base and add sweetness.
Flour
Sets the cake's structure as the batter bakes.
Cream of tartar
Stabilizes the whipped egg whites so they hold their peaks.

The step that matters

Folding in the egg whites. Whipped whites hold air that gives the cake its lift. Stirring them in vigorously knocks that air out, leaving a dense cake, so fold gently until just combined.
