What each ingredient does

Pigeons
Provide the main meat, which becomes tender through slow stewing in liquid.
Butter
Adds richness and body, and helps thicken the sauce when worked in.
Egg yolks
Thicken the sauce and give it a smooth, rich texture when gently heated.
White wine
Adds acidity that brightens the flavour of the rich gravy.
Gravy
Forms the savoury liquid base that cooks the pigeons and carries the flavour.

The step that matters

Thicken with butter and egg yolks. Egg yolks thicken when heated but can curdle or scramble if the liquid boils. Keep the stew at a gentle heat while adding them so the sauce stays smooth.

Swap the mace
