Jowl and Turnip Salad

Ingredients

Directions

  1. Wash the jowl clean and boil it for three hours.

  2. Add the turnip salad and boil for an additional 30 minutes, being careful not to overcook.

  3. Remove the jaw-bone by running a knife around the lip and under the tongue.

  4. Serve the jowl and salad with fresh poached eggs on top.

  5. For a variation, broil the jowl for breakfast and top with pepper and butter.
