Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. Brown the cut-up chicken in lard in a deep oven‑safe dish.

  3. Add chopped onion, parsley, thyme, sage, and black pepper to taste.

  4. Pour in boiling water. Stir well.

  5. Let it simmer until cooked.

  6. Mix cream, butter, hard‑boiled egg yolks, grated nutmeg, and spices in a bowl.

Assemble and bake

  1. Prepare a paste with flour, butter, and lard.

  2. Line a deep dish with the paste.

  3. Add layers of chicken and thin bacon.

  4. Sprinkle with large crumbs, pepper, and butter.

What each ingredient does

Flour
Forms the paste that lines and covers the pie, giving it structure.
Lard
Adds fat for a tender paste and rich flavour when browning the chicken.
Hard-boiled egg yolks
Add richness and body to the creamy filling.
Cream
Adds moisture and richness to the filling.
Butter
Adds fat and richness to the paste and filling.

The step that matters

Baking gradually for two hours. Long, gentle heat lets the chicken cook through and the filling set without drying out the crust. Rushing with high heat can leave the pastry underbaked or the meat tough.
