What each ingredient does

Beef shank
Slow cooking breaks down connective tissue, giving the broth body and the meat tenderness.
Potatoes
Mashed potatoes thicken the stew and add body to the broth.
Butter beans
Starchy beans hold their shape and add creamy texture and substance to the stew.
Corn
Adds sweetness and a fresh, tender bite to the stew.
Tomatoes
Add acidity and brightness that balance the rich meat and starches.
Butter
Stirred in at the end, it adds richness and a silky mouthfeel.

The step that matters

Cook the shank until tender. Collagen in the beef breaks down into gelatin only with long, gentle simmering. Stopping early leaves the meat tough and the broth thin.
